Camp Cooking

Our weekend camping was just about perfect. We found a great spot near the water, the weather was beautiful, and I discovered how much fun it is to cook over a camp fire.

Some friends came out Saturday evening and all the kids roasted hot dogs over the fire. Later we broke out the marshmallows and made s'mores. We used saltines as I didn't have graham crackers. Sunday evening I buttered some potatoes and put them on a grate we brought to put over the fire. When they were about half way done I added some chicken that had been marinating in the cooler several hours. Made a tossed salad and dinner was done. Grandma and Grandpa B. stopped by for a visit and watched the boys roast the last of the marshmallows. Monday morning I started our usual whole wheat pancakes on the camp stove. The bottle of propane ran out and I finished the pancakes over the fire. The boys said they tasted better that way. I'm looking forward to trying more recipes over the fire.

Here is my pancake recipe. I double it for my family.

Whole Wheat Pancakes
1 cup WW flour
1 Tbsp sugar
2 tsp baking powder
1/4 tsp salt
1/3 cup dry milk powder
1 cup water
1 egg
2 Tbsp oil

Combine dry ingredients in a mixing bowl. Add wet ingredients. Stir till just combined. Pour jsut under 1/4 cup in hot skillet for each pancake. Flip when bubbles start to form and pop.

Camping Food

We are going camping this weekend. So today is all about getting all the food ready to go. It is amazing how much food it takes to feed the six of us for three days and two nights. I know it's the same amount if we are at home. But laying it all out on the counter and then fitting it into two coolers makes it seem like so much more. But I think it's fun planning out the menus and working with the boys in the kitchen. Already this morning my 9yr old mixed up a coffee cake and it is in the oven as I type. Other foods I will be making are sloppy joe mix,pancake mix,whole wheat bread for sandwiches(I'm going to use Em's recipe from her blog at Accidental Farmwife) Ranger cookies,caribbean marinade for chicken over the camp fire,and apple turnovers with some pie crust dough in the freezer. So much food, so little time!

Sing of His Mercies

I chose Sing of His Mercies as the name of my blog because I love praise songs that come from scripture. This one is from Psalm 89:1. I will sing of the mercies of the Lord forever: with my mouth will I make known thy faithfulness to all generations.

A lot of mornings I will sing or whistle while cleaning up from breakfast and getting ready for the day. Sometimes the boys join in and it just gets all of us in a great mood for the start of school. Some of our favorites are : Praise Ye the Lord, This is the Day,Majesty,Jesus Loves Me,Power in the Blood,and making up praise songs as we go.

I want to use this blog to post cute,profound,funny things my boys say and do,post some of our families favorite recipes,once I figure out how,post pictures, and journal a little about what God is showing me in His Word.
